Got a late start on this -- I'm way too busy cooking!  I'm trying 5-6
recipes a *day*!  

Speaking of which, this issue is *very* recipe heavy, because, of
course, you all need recipes for Thanksgiving.  Here they are!

Me, I'm heading back to the kitchen to cook some more.  I've already got
5 kinds of deviled eggs!  Sunflower-Cheddar crackers!  Sugar free
Kahlua!  Black-Bottom Kahlua Cheesecake!  But I must cook more!  MORE, I
tell you!!

Thanksgiving Damage Control!

Thanksgiving is my favorite holiday.  It's not about gifts and it's not
about booze, it's not about war, and it's not about politics.  It's
just about gathering with people you love, eating a really wonderful
meal, and being conciously grateful that you're with people you love,
being well-fed.  That's a beautiful thing, and the fact that I'm a
Mayflower descendant has -- well, only a little to do with it.

By now you've probably decided just to what extent you want to Indulge
on Thanksgiving Day -- whether you're going to try to truly de-carb your
menu, just cut back on the carbs a bit, or whether you're just going to
say "the heck with it!" for this one meal, and eat all the foods that
are traditional in your family.  Whatever you choose, that's fine!  But
assuming that you *do* Indulge, you'll need some damage control. 
Here are some ideas:

* On Thanksgiving Day, as on *every* day, eat your protein breakfast! 
No fair starving yourself all day so that you hit the dinner table
ravenous, and inhale everything in sight.  If you eat your breakfast,
you'll most likely be content to Indulge in just one moderate-sized
serving of each of your favorite carb foods, instead of two or three or
*four* helpings!

* I've said it before, but it bears repeating:  Don't bother eating the
carb foods that don't really matter to you!  If you adore, say, candied
sweet potatoes, go ahead and have some.  But if you, like me, couldn't
care
less about candied sweet potatoes, don't eat them just because they're
traditional.  *NEVER* waste an Indulgence on something that isn't
*exactly* what you want!  I've even passed up the dessert at
Thanksgiving dinner because it was a Pumpkin Roll, and I just didn't
care enough about it to bother.

* Eat plenty of the non-carb foods at Thanksgiving Dinner, too!  Have a
big serving of turkey; it'll help prevent a crash from the carbs.  Eat
plenty of any low carb vegetables that appeal to you, as well.  Don't
just have a carb-o-thon.

* Once Thanksgiving Dinner is over, that's *it*.  Your Indulgence, c'est
fini!   You do *not* get to spend the rest of the long weekend eating
hot turkey sandwiches, leftover stuffing and potatoes, and apple pie.
Next meal it's time to get right back to your low carb Way of Eating. 
Have some leftover turkey cut up in a salad.  Eat the leftover green
beans.  But do *not* stretch your Indulgence out past the Big Dinner. 
If you do, you're well on your way to spending the whole Holiday Season
eating every carb in sight -- and being at least a size bigger by New
Year's Day.

* If dinner's at your house, pack up all the leftovers you want to
avoid,
and send them home with other people.  If you're eating at someone
else's house, turn down all offers of leftover pie to take home!  Ask
for leftover turkey, instead.  

* Going to have a house full of people all weekend, busily gorging on
leftovers?  For goodness' sake, make sure you have plenty of low carb
treats in the house.  Make a sugar free dessert.  Buy some mixed nuts,
some hot wings, some little smokies.  Invest in some imported brie, or
Stilton, or whatever you like.  Have bags of pork rinds on hand. Check
out your grocery store's deli for snack trays that will work for us, and
still appeal to a crowd -- the relish tray, maybe, with cut up veggies
and ranch dip, or the cheese and cold cut tray, or the wing platter.
Whatever it takes to keep you from eating all the carbs everyone else is
eating!  

* All that family togetherness beginning to wear on you?  Starting to
drive you toward the refrigerator, and the leftover stuffing?  *GET OUT
OF THE HOUSE*.  Go start your Christmas shopping.  Take in a movie. 
Head downtown to look at the Christmas decorations that have sprouted,
like magic, overnight in the store windows.  Go to the library and take
out a good, absorbing novel.  If the weather's nice, go to a forest
preserve and take a hike.  If it's snowy, gather up the kids -- and any
childlike adults -- and go sledding, or have a snowball fight, or build
a snowman.  But *don't* sit around in front of the TV or around the
kitchen table, trading veiled barbs with your parents or your siblings,
or listening to Uncle Jack tell the same stories for the 45th
Thanksgiving in a row. It'll only drive you to food.

* Reflect on all the things you have to be thankful for!  Not the least
of which is the fact that you are so well-fed that you're concerned
about your weight.  That, my friend, puts you among the truly fortunate
of the world.

Recipes!!  We Still Need Recipes!

We've now received more than twenty recipes from readers to go in the
new low carb cookbook, and we have a team of crack recipe testers
testing every single one.  But we need more!  MORE, I say!!

This is your big chance for low carb immortality!  If we use your
recipe, you will be credited in the cookbook, and low carb dieters the
world around will know your name, and thank you in their hearts!  So
send those recipes in!  

In particular, we need recipes for fish and seafood, vegetables, and
soups.

Here are the guidelines for writing your recipes down:

1.  List ingredients in order of their use.
2.  Include exact measurements and package sizes of all ingredients
("salt and pepper to taste" is okay).
3.  Write preparation directions in complete sentences.
4.  Make sure you include directions on how to use all ingredients
listed.
5.  Include sizes of pots, pans, and casseroles.
6.  Indicate exact cooking temperature and time.
7.  Add a tip on how to tell when the food is done (e.g. "brown and
bubbly", "reaches 150 on a meat thermometer", "firm to the touch").
8.  Include the number of servings based on reasonable portions.
9.  Avoid using specific brands of ingredients.  Recipes should use
standard grocery or health food store items rather than specialty
low-carb products by specific manufacturers.

So send in those recipes!!

De-Carbing Stuffing

Maybe you're among the folks who are trying to at least reduce the carb
count of the holiday meal -- I know I am.  What can you do about
*stuffing*? 

* You can make low carb bread to use in place of regular bread.  My
sister did this last year, and said it worked out extremely well, so
this is what I plan to do this year.  There's a recipe for low carb
white bread later on in this issue.

* Instead, you can use purchased low carb croutons, or purchased low
carb bread.  Several of the low carb etailers carry these products.  I
made stuffing last year from croutons made by Better Bakery -- Synergy
Diet carries these -- and it came out just fine.

* You could also use "light" bread from a regular grocery store.  Some
of these have a high enough fiber count that when you subtract it out,
they're pretty low carb.  I find these breads pretty squishy and
uninteresting, but if you have historically used standard American white
bread for your stuffing, I doubt you -- or anyone else -- will notice a
difference.  

* I'm afraid I know of no low carb substitute for corn bread.  Sorry,
Southerners. :-(

* You can modestly increase the quantity of vegetables, while cutting
back a bit on the bread.  For instance, I am looking at a rather classic
recipe for bread stuffing that calls for 1 cup minced onion and 3/4 cup
chopped celery leaves, to be mixed with 2 1/2 quarts of bread.  Why not
use 1 1/2 cups minced onion, and 1 1/2 cups celery leaves (or just diced
celery, which is traditional in my family), and cut back on the bread by
a cup or so?  Bet you can't tell the difference.

* That same traditional recipe suggests that you can also add two cups
of oysters to the stuffing, sauteing them first in butter along with the
celery and the onion.  No carbs in those oysters, and they're *very* New
England.

* In my family we always add a pound of browned and crumbled pork
sausage to the stuffing.  This year I'm going to up it to a pound and a
half, and, once again, cut back on the bread a bit -- even though I'll
be using low carb bread, it's still higher carb than sausage!

I tell you true; last year I made reduced carb stuffing just for me -- I
was at my Mom's, and she had made her standard stuffing for everyone
else.  A couple of folks got my stuffing by mistake -- and never
noticed.  So try it!

Cranberry Sauce

You're not going to believe how easy it is to make no-sugar-added
cranberry sauce!  It's not seriously low carb, because cranberries have
some carbs in them, but it's a whole lot lower carb than the stuff you
buy in a can.  There's a *ton* of sugar in commercial cranberry sauce
because cranberries are so tart to begin with.  But with a recipe that's
this easy, and tastes this good, you may never bother with store bought
cranberry sauce again!

Whole Berry Cranberry Sauce

12 ounce bag cranberries
1 cup water
1 cup Splenda

Pick over the cranberries, discarding any nasty ones.  Put all
ingredients in a saucepan over medium heat.  Bring to a boil, and boil
until the cranberries pop.  That's it.  Cool it and it's ready to serve.

This makes over a pint, and there's about 54 grams of usable carb in the
batch.

If you like, you can add a teaspoon of unflavored gelatin to this to
thicken it up a bit, but it's not seriously necessary.  

If you're a bit more adventurous, you could make

Cranberry Chutney
Think of this as cranberry sauce with a kick!

12 ounce bag cranberries
1 cup water
3/4 cup Splenda
2 cloves garlic, crushed
1 teaspoon ground cloves
fresh ginger, a piece about the size of two whole walnuts, grated or
minced very fine
1/8 teaspoon salt
	Simply combine all ingredients in a saucepan over medium heat, bring to
a boil, and boil until cranberries pop; about 7-8 minutes.  It improves
if you then let it sit a while.  You could add a little cinnamon to
this, too, if you like; up to you.
	There's about 55 grams of carbohydrate in the whole batch -- not dirt
low, but a tablespoon or two shouldn't be more than 4-5 grams.  Very
flavorful.  Wonderful with curried leftover turkey!

Guest Recipe!

The talented, the lovely, the beautiful Diana Lee (and she really is,
folks; I'd kill for facial bones like Di's) has graciously consented to
let me publish her recipe for white bread from her first book, Baking
Low Carb.  My sister used this bread to make turkey stuffing last year,
and said it was wonderful.  If you have a bread machine, haul it out now
and start making a loaf every day or two, and stashing it in the
freezer.  Then you'll have plenty on hand for making stuffing with come
Thanksgiving Day.

White Bread

1/2 cup water
1/2 cup heavy cream
1 tablespoon oil
1 egg
1/4 teaspoon salt
1 cup high gluten flour
1/4 cup psyllium fiber (if your drug store doesn't have this, try a
health food store.)
1/2 cup oat flour
1/2 cup vanilla whey protein powder
1 package Rapid Rise Yeast

Put ingredients in bread machine in this order:  Water, cream oil, egg
(slightly beaten), salt, gluten flour, oat flour, vanilla whey protein
powder, yeast.  Set machine for Rapid Bake, if your machine has varying
cycles.  (Dana's Note: Mine doesn't, but I have no problem baking low
carb bread in it.)

There are 60 grams of carb in the loaf, and 98 grams of protein.

 I have been on weight loss diets almost all of my life! I've lost and
gained over 500 pounds in my lifetime. This will no longer be the case
for me now that I have read Dana Carpender's book "How I Gave Up My Low
Fat Diet And Lost Forty Pounds" and am  following her plan! I am now at
the lowest weight I have been in ten years and it was so easy to attain
this weight loss. How can you call this program a diet? I've eaten
steak, chicken, veggies, cheese and occasionally Peanut M&M's, ice cream
and chocolate mousse! This program is not a starvation plan. I have
always
felt so satisfied and healthy and have so much energy! Best of all I
know I will be able to stay on this food program for the rest of my
life! If you are tired of the diet yo-yo I highly recommend Dana's book.
It's a fun, fast paced, easy read and it will be the last diet book
you'll ever need to buy!

Reader Success Story

Sarah Ruedger wrote to say that she wasn't sure her success story was
"big enough" to print -- but I think it's stupendous!  Here it is:

In April, 2001: I weighed 327 pounds, and I was 23 years old.  I was 
completely miserable, both emotionally and physically.  I had serious 
depression (that I've been battling for years), insomnia, and was
constantly 
worried and phobic of many things.  I woke up a lot during the night, 
sometimes with heartburn and sometimes in a panic (a doctor suggested I
may 
have obstructive sleep apnea).  I had stomach problems and edema (my
ankles 
would swell almost painfully).  I dreaded any occasioin during which I
might 
have to walk.  Fairly often, I binge-ate until I felt sick.

Now: I've been low-carbing for more than 6 months. (I started May 3,
2001) I 
have lost almost 45 pounds and all of the problems I mentioned above are 
gone.  At 24 I feel younger than I did 5 years ago.  I no longer take
the 
anti-anxiety medication I'd been on for 2 years & have almost completely 
discontinued the mood-stabilizer that I had been taking for 5 years.  No 
more swollen ankles, no more night panic, no more tummyaches.  I don't
mind 
walking places (well, for the most part!) and I go out dancing. I have
so 
much more control over my food habits. I am desperately grateful to Dr. 
Atkins and everyone else on the internet who helped to educate me about
this 
WOE.  I totally enjoy creating new low carb recipes, and try to spread
the 
word, so that others like myself can find the "hope and happiness of low 
carbing".

I still have about 120 more pounds until I reach my goal weight.  But, I 
have faith, for the first time in my life, that I can do it.
