Daily Menu January 2nd, 2008

It struck me that some folks -- newbies, in particular -- might find it instructive to know what a long-time low carber eats on a day-to-day basis. So every day I'll be posting a list of what I ate the day before.

You may be surprised to find that a lot of the food I eat is quite simple. When I'm developing recipes or taking time off, I'm creative in the kitchen. But when I'm busy, we eat a lot of roasted chicken, broiled steaks and chops, fried eggs, omelets, and the like, generally with salad or simple steamed vegetables on the side. Right now I'm assembling and editing my latest book, so I'm doing simple, plain cooking most of the time.

But when I do come up with something new, I'll share!

Pan-broiled pork shoulder steak with cajun seasoning



Three Fiber Rich Crackers with Braunschweiger (I love liverwurst!)

Granny Smith apple

Late Lunch/Supper

Three roasted chicken thighs (they were small!)

More coleslaw -- I ate a half-a-head of cabbage by the end of the day!

Beverages: Tea, sparkling water, dry red wine

Day's totals: 1646 Calories; 91g Fat (57.3% calories from fat); 83g Protein; 69g Carbohydrate; 19g Dietary Fiber
