Daily Menu January 4th, 2008

Breakfast:
Creole Eggs -- three eggs poached in a quick Creole-style tomato sauce. This is one of the recipes from 15 Minute Low-Carb Recipes that I've come back to so many times I have it memorized.

Lunch:
The last of the roasted chicken thighs. I was out of coleslaw, so I wrapped bites in red leaf lettuce.

Snacks:

Sugar-free dark chocolate

A whole pink grapefruit I peeled and ate out of my hand like an orange. (Actually, I didn't eat quite the whole thing, because my pug, Nicky, insists that I share. Nick has unusually broad tastes in produce for a dog.)

Dinner:

Broiled rib eye steak
Buttered peas
(This is getting embarassing. I'd better cook something at least a little interesting for dinner tonight!)

Beverages:
Tea
Cider-ade
Sparkling water
Dry red wine

Daily totals: 1847 Calories; 94g Fat ; 94g Protein; 75g Carbohydrate; 17g Dietary Fiber

First of all, thanks for your wonderful cookbooks and your blog with all its great info.
I was curious about the creole poached eggs you mentioned. I couldn't find them in your 15 minute cookbook. MIne was published in 2003. Do you have a revised edition?
I would love the recipe. Thanks!

Creole Eggs

I am officially a Big Ol' Dork. It's not in 15 Minute, it's in The Every Calorie Counts Cookbook. This is what comes of having the recipe memorized so you don't have to go look for the book every time you make it.

I've got a call in to my publisher, asking for permission to reprint a few recipes from the books here in the blog. They always let me do so in the old 'zine, so I'm expecting them to say yes. Assuming they do, I'll post the recipe later.
